A few years ago, when David Wolfe discovered raw cacao beans (sometimes called “cocoa beans”), the world changed.
Up until that time, the raw chocolate nut from which all chocolate is made (raw cacao IS raw chocolate) was almost totally unknown to North America. You couldn’t buy this food anywhere–internet included–so rare it was.
